The stealthy cronut invasion that is maddeningly taking over the nation first hit Henderson at Bread & Butter, then Lulu's Bread & Breakfast in Centennial and now has surreptitiously invaded the Strip. Now Botero at Encore Las Vegas has Bonuts and Coffee, a variation on the croissant and doughnut hybrid.
Pastry chef Maria Mac says she tried three different recipes over five days before coming up with her version. "Some versions of the cronut are super sugary and cloying sweet," she says. "Others have pastry creams layered inside. I wanted to shoot for something that was the very essence of the doughnut-croissant mash-up — buttery and flakey with that hint of freshly fried goodness."
This version features a cinnamon sugar coating with a vanilla cream, chocolate and raspberry compote served in dishes on the side. Brought to the table in a doughnut box, the Bonuts, four in total, come with a side of coffee for $15. Flakey good they are.
