The Bellagio's very fun pop-up Beer & BBQ returns to the Epicurean Epicenter at noon July 6 with executive chef Edmund Wong manning the grill. The $95 per person event includes Bellagio director of wine and master sommelier Jason Smith hosting the interactive lunch with beer pairings from Bellagio assistant director of beverage Ricardo Murcia.
The three-course lunch includes a Thai beef salad paired with Goose Island Pere Jacques 2010, a Belgian-style ale brewed in Chicago. The entrée features a selection of meats and fish including cedar plank salmon with purple potato and Chinese sausage paired with Goose Island Sofie, a farmhouse Saison. Other options include a roast herb chicken with Vidalia onions and Fenugreek carrots paired with Stella Artois and braised pork belly with smoked almonds and jalapeño relish paired with Leffe, a Belgian Abbey beer. Wong puts his own spin on traditional barbecue sides with a watermelon and tomato salad with aged balsamic, grilled broccoli with pine nuts and raisin buttermilk dressing and warm orzo pasta with peas and artichokes.
For dessert, a trio of peach and blueberry pie, honey and chocolate nougat "Turron" and an ice cream sundae with vanilla ice cream, brownies, caramel sauce and toasted almonds, paired with Hoegaarden Sorbet dessert beer.
