Movement on The Linq's Chayo Mexicano Kitchen and Tequila Bar is kicking into high gear. To be located on the Flamingo Las Vegas side of the the $550 million, 300,000-square-foot Linq project that includes the massive High Roller observation wheel, Chayo Mexicano's 14,800-square-foot, two-story space will include multiple bars with indoor and outdoor seating, private dining rooms and space for 450 patrons. The "upscale casual restaurant" is aiming for a "wildly intoxicating environment."
The substantial footprint requires an equally weighty budget and has a current valuation of $5 million. The newly created Three Amigos Restaurant Group is behind the project. Familiar local talent PWI Construction is building the space, adding to a résumé including Charlie Palmer Steak, Sushi Samba and Emeril Lagasse's Table 10.
Also readying for changes at the Flamingo, Jimmy Buffett's Margaritaville restaurant will receive an announced $244,709 makeover, including changes to the Strip-side entrance, befitting its prominent position at the entrance to The Linq's promenade.
A portion of The Linq hopes to be open by late 2013, including Guy Fieri's as yet unnamed restaurant next door at The Quad, while early 2014 opens are scheduled for tenants including Brooklyn Bowl.
