Sin City is home to a lot of restaurants and bars, but there are tons of hidden gems that the majority of Las Vegans aren't unearthing. To help guide us to these potential discoveries, we've enlisted some of our city's food players to share their recommendations for a weekly feature dubbed Dining Confidential. Joseph "JB" Boyer joined P.J. Clarke's at the Forum Shops at Caesars in April 2011 as executive chef after more than 20 years in the culinary industry. His stops along the way included Blue Water Grill and Atlantic Grill in New York City, stints in Syracuse, N.Y., the Palm in Times Square and Capital Grille in Paramus, N.J. "One of the best things about relocating is having the opportunity to explore and discover new favorite restaurants," he says. Here he shares five of his discoveries in Las Vegas so far.
Which restaurants do you turn to when you're not working?
Lotus of Siam: WOW what a hidden gem. It took me a minute to find it but well worth it. The Massaman Chicken Curry is delicious. It is so balanced between the spice and the curry you can't wait to take the next bite. I would also recommend the Roast Duck Curry. The combination of the fruit and the curry is perfect.
Table 10: This is a fun spot. The Fresh Baked Grissini is a great appetizer. The crisp grissini wrapped with prosciutto and served with a rich truffle butter is great. The Kurobuta Pork Rack is to die for. You have to arrive early for the rack because when the sell out for the day its gone.
Bacchanal Buffet: When this buffet opened up it received great reviews so I took my wife and kids to go check it out. They love this place. My two children ask to go every weekend. They love to get all the individual dishes and share. The bonus is the food is awesome. Everything is extremely well prepared, and my favorite dish was the bite-sized tamales.
RM Seafood: When in the mood for seafood you have to head over to RM Seafood. The Meagre "White Sea Bass." It is a great combination of flavorful bass matched with an olive panzanella salad. I love olives. The Cioppino is one of the best I've ever had.
SushiSamba: This is one of my spots for sushi and ceviche. It was one of my favorites in New York. The fish is always fresh and the ceviche combinations are always inspiring. My loyalty just carried over to Vegas.
