Here it is, the entire menu from Tom Colicchio's Heritage Steak, the Top Chef judge's third restaurant in Las Vegas. The steakhouse at the Mirage keeps it simple yet dives deep with a menu divided into first courses, main courses, Heritage Steaks and sides. Everything here is cooked over fire on a charcoal grill, wood-burning oven or the Grillworks Infierno, dubbed "a versatile grill that also serves as a hearth, smoker, broiler and more.
So look for starters such as grilled octopus, wood-roasted peaches, spicy braised pork belly and ash-roasted bone marrow. Braised short ribs, a rack of lamb and duck breast are just some of the dishes on the entrees menu. The Heritage Steaks section includes three dishes — a 10-ounce Wagyu Ribeye, a 14-ounce Painted Hills New York strip and a 10-ounce natural prime filet.
