Meet Wei Chan, the new executive chef at Wazuzu at Encore Las Vegas.
Chan hails from New York City, where he opened Tommy Bahama Restaurant & Bar and ran the kitchen at The Carlyle. He also was the chef de cuisine at Rosewood Little Dix Bay's Sugar Mill in the British Virgin Islands and The Bodyholiday's Tao Restaurant in St. Lucia.
So far, new editions to the menu include the Wazuzu dragon slider with barbecue pork, white kimchi, coriander and crushed peanuts. The dish is served in a traditional Chinese bun, hand-branded with a dragon. Look familiar? It mimics the 27-foot crystal dragon that overlooks Wazuzu's dining room. Another new dish — the Wazuzu Sake Roll made with salmon sashimi and salmon tartare served with a ponzu sake dressing.
