Meet Anthony Amoroso, the new executive chef for Aria. His ties to Vegas run deep. He started as a sous chef for Rick Moonen at Oceana when it was in New York City and then moved on to chef de cuisine. He even helped Moonen open RM Seafood at Mandalay Place as the executive chef.
He worked for Michael White when he opened Fiamma Trattoria & Bar at the MGM Grand, then as executive chef for Michael Mina's namesake restaurant at the Bellagio. While there, he competed on Iron Chef America and beat Iron Chef Masaharu Morimoto in a battle featuring branzino.
Amoroso continued working with Mina as SeaBlue at the Borgata in Atlantic City until that closed.
