Sin City is home to a lot of restaurants and bars, but there are tons of hidden gems that the majority of Las Vegans aren't unearthing. Trevi's executive chef Peter Scaturro learned all about Italian cuisine growing up in an Italian family in New York City. When he turned 16, he took a job as a dishwasher at an Italian restaurant where his uncle Salvatore was the chef. Scaturro worked for Bertolini's Authentic Trattoria by Morton's Restaurant Group, located in the Forum Shops at Caesars where Trevi now stands. His other previous experience includes being a corporate trainer sous chef for Bertolini's in Washington, D.C., and owner and general manager of Scaturro's Café in Las Vegas. Here he shares some of his favorite restaurants and dishes, including one must-stop spot on the East Coast.
Which restaurants do you turn to when you're not working?
When I'm not in the kitchen at Trevi, I often visit STK inside the Cosmopolitan Las Vegas. I love their creamy Yukon potatoes, and the baked oysters with spinach, Pernod sauce and bacon are delicious.
I also love going to D.O.C.G. Enotoca, which is also inside the Cosmopolitan. The veal chop with porcini jus is one of my favorites. The balance of meat and sauce is always just right, so every bite is as good as the next.
Finally, being from New York, whenever I get the chance to head back east I always stop in to grab some White Castle! Their sliders are the perfect casual late-night snack.
