Want to know how tough it is to work in one of Pierre Gagnaire's kitchens? Eater National has a video of a behind-the-scenes stage at his three Michelin star Pierre Gagnaire in Paris. Paul O'Neil, who won the 2013 Roux Scholarship that gives one British chef a chance to work for three months in any three Michelin kitchen worldwide, says, "I never expected it to be easy and it hasn't been easy ... I don't know many kitchen that do the hours they do at Gagnaire. It's from 7 o'clock in the morning ... finishing at 11 or 12, 12:30 every night." Go watch. [Eater National]
