Michael van Staden takes over the reigns of Bacchanal Buffet just as the nine restaurants under one roof at Caesars Palace celebrates its first birthday. Van Staden helped develop Bacchanal's initial menu.
The South African has worked at Jean Joho's Eiffel Tower Restaurant at Paris Las Vegas, Mistral at Hilton, Michelin-starred Alizé at the Palms and Michelin-starred Michael Mina at the Bellagio. He developed his worldly view on cuisine while traveling as executive chef at Celebrity Cruises, where he was the project manager for their Solstice Class start-up, developing new restaurant concepts and managing a group of 20 traveling chefs and a crew of 300.
Now he oversees a kitchen with more than 100 team members, each with their own specialty in the nine kitchens within Bacchanal.
