Back in July, Eater Vegas dished out news of the Chelsea Social Club, a $12.8 million, 23,354-square-foot social club with room for 1,143 at the Cosmopolitan of Las Vegas opening in December. Now comes word that it will be called Rose.Rabbit.Lie. and feature what's described as a place that "blurs the lines between restaurant, bar, club and show to create a grand social experiment."
"The idea of a modern social club is inspired by the spirit of Johnny Carson, Desi Arnaz and Circus Maximus — the past that still captures a romantic piece of real estate in our minds," Cosmopolitan CEO John Unwin says in a press release. "It's personal and intimate one moment, grandiose and inclusive the next. Guests are surrounded by the evening and become part of the experience the moment they arrive. As an audience, we may not even know what is on tap for the evening, but it will certainly be something to talk about. Here, the night always makes for great conversation."
Perhaps most interesting is the confirmed involvement of Coastal Luxury Management out of Monterrey, Calif., which handles Pebble Beach Food & Wine and Los Angeles Food & Wine, where Cosmopolitan chefs frequently exhibit, as well as Restaurant 1833, Cannery Row Brewing Co. and Harvest Farm-To-Table. If Rose.Rabbit.Lie is anything like Restaurant 1833, a James Beard Foundation semifinalist for Best New Restaurant in 2012, expect an ambitious cocktail program paired with interesting takes on dishes.
Cosmopolitan also expects to name an entertainment partner for the space as well.
AvroKo, which created the looks of Lavo at the Palazzo and Social House at Crystals, is designing the space.
