Rumors coming out of Aria point to Michael Mina's American Fish converting into a French bistro from the chef. Whether that means a spin-off of San Francisco and Seattle's RN74 with its simple interpretations of French cuisine meant to go well with wine and named for Route Nationale 74, the major road that travels through Burgundy, France, or not remains to be seen. Requests for comment from Michael Mina and MGM Resorts International public relations were not answered.
American Fish opened in 2009 when Aria debuted on the Strip. Mina also has his eponymous flagship at Bellagio, StripSteak at Mandalay Bay and Pub 1842 at the MGM Grand within his Vegas empire.
If true, this would mark the third shakeup in the empire. His restaurant Seablue at the MGM Grand shuttered to become Pub 1842 while favorite Nobhill Tavern closed last March to make way for Crush from Michael and Jenna Morton.
