The New Apostrophe Bar's Old School Tribute to Caesars

It's round, frothy, pricey and certainly catches the eye. Apostrophe Bar at Caesars Palace is open with a narrow drinks menu as befits its small scale, but it does feature an exclusive series of cocktails only available at this circular bar located just outside the Bacchanal Buffet.

Publicly filed budgets estimated the construction costs to be $1,300,000, resulting in an almost a $1,000 per square-foot price tag. The counter top is made of exotic onyx, the color shifting "bubble column" stretches almost to the ceiling and the cocktails feature unusual elements and inspiration from the 1960s and 1970s.

The motivation for the bar's own name nods back to 1966 when prior to opening, resort creator Jay Sarno removed the apostrophe from the name "Caesar's Palace" to suggest there was no "one" Caesar, but every guest would be treated like an emperor.

And now both Sarno and his marketing concept have been celebrated with a beverage. The Missing Apostrophe cocktail is based around the resort's own specially chosen Herradura Double Barrel Reposado Tequila, already promoted on the Old Homestead Steakhouse drinks menu. And The Sarno creation features vodka kicked up with elements like rock candy syrup. The remainder of the narrow menu includes a quirky quality, with more retro references and a $14 or $15 price point.
