Old Homestead Steakhouse at Caesars Palace fires up a whiskey pairing tasting menu with Glenfiddich Single Malt Scotch Whisky on Oct. 8. The five-course menu from executive chef Michael Gill features Old Homestead favorites and some new dishes created to complement a selection of Glenfiddich pours.
Here’s a look at the menu.
Passed canapes: Tuna tartar with avocado-wasabi mousse, heirloom tomatoes and mozzarella cheese, Old Homestead mini meatballs with ricotta cheese and crispy crab cake with mustard sauce.
First course: Shellfish trio of Kusshi oyster, diver scallop and King crab Leg accompanied by Glenfiddich 12 Special Reserve.
Second course: Scottish salmon hot and cold, served with caramelized onion puree, vanilla and saffron vinaigrette accompanied by Glenfiddich 15 Solera Reserve.
Third course: Braised pork belly served with pulled pork, beans, compressed apple and spiced sweet potato accompanied by Glenfiddich 18 Special Reserve.
Fourth course: Pat La Frieda dry-aged strip loin with smoked trumpet mushrooms and wild huckleberries accompanied by Glenfiddich 18 Special Reserve.
Fifth course: Chocolate bread pudding with cardamom ice cream, anglaise and cocoa tuille accompanied by Glenfiddich 21 Gran Reserva.
The five-course special pairings tasting menu is priced at $165 per person plus tax and gratuity. Cocktails will be served at 6:30 p.m. followed by dinner at 7:30 pm. For reservations, call 702-731-7778.
