The Light Group expanded off the Strip with the opening of Hearthstone Kitchen & Cellar, the new restaurant and wine bar from executive chef Brian Massie, who says the menu here will be constantly changing.
Two oversized hearth ovens imported from Italy take over the middle of the dining room, and guests can chat with the chefs as they prepare cast iron steaks, baked ricotta with truffle honey and wood-roasted bouillabaisse. Also find a charcuterie bar filled with meats, cheeses and oysters.
The wine program here includes 75 labels along with two rotating wines on tap. Wine director Troy Kumalaa says he wants to introduce diners to "different labels that they may not try otherwise." Diners can also buy wine in a retail market.
Hearthstone, which takes over Hachi at Red Rock Resort, is open at 5 p.m. daily.
