Finally, some concrete details behind the most mysterious restaurant headed downtown. Future Carson Street tenant and neighbor to the forthcoming Vegenation and Glutton, Zydeco Po-Boys now has its plans firmly in order and is aiming for a first quarter 2015 debut.

Breslin Builders, who have completely transformed this vintage building located across the street from Eat and the Container Park, have revealed Zydeco's Brandon Trahan will create the smallest restaurant of the trio, but bring some regional flavors to this mini-culinary destination.

As befitting the name, "Cajun style cuisine" will be served at a walk-up counter for diners to enjoy at their small interior dining space or take to go. The under construction kitchen will create in-house specialties including sausages and gumbo. The design will feature an urban, rustic approach with "exposed concrete floors, reclaimed wood accent walls, brick veneering accent walls, and exposed ceilings."

Original plans called for an outdoor patio at Zydeco, but this was not mentioned in the current update. Both Glutton and Vegenation are hoping to debut by December.
