Jim Begley says the best place to start on the 87-item menu from José Andrés at Bazaar Meat at the SLS Las Vegas is the tartares. He says the $24 classic "is destined to become just that," although on one visit, servers prepared it table side and at another they did not.

He then takes diners on a trip through the menu, trying the beef and Parmesan grissini "accompanied by a ridiculous gorgonzola foam fondue," the "smoke and ice" fresh oysters, morcilla with uni, the vegetarian setas al ajillo, grilled asparagus and Delmonico potatoes.

Perhaps the most whimsical items on the menu? Foieffle with peanut butter and foie gras foam and cotton candy foie gras, two must-tries.

Begley said he has one disappointing and sinewy flatiron steak, but notes that with such a large menu, diners can go sans beef and still be satisfied.
