Pieology Sets a Date for Downtown Summerlin

Pieology Pizzeria, creators of the "healthiest kustom pizza in the world" will officially debut the first of their two Las Vegas destinations at Downtown Summerlin on Friday Dec. 12.

First revealed by Eater Vegas, the rapidly expanding chain was co-created by the family of tennis champion Michael Chang.

With an estimated $250,000 construction budget, the Pieology space sits between Five Guys Burgers & Fries and Moe's Southwest Grill in the Dillard's and Nordstrom Rack end of the shopping district.

Pieology's "build-your-own" pizza concept begins with 11-and-a-half-inch pizzas, then guests choose the crust, the sauce and more than 30 ingredients before the pie is baked in an open-flame oven at temperatures up to 800 degrees. The pizza will be ready to eat in about two minutes.

Opening hours are listed as Monday to Saturday from 10 a.m. to 9 p.m. and Sunday from 11 a.m. to 7 p.m.

The second Pieology will debut next summer at the Hughes Center alongside Panera Bread, The Habit Burger, Jamba Juice and Chipotle.
