Katie Prindl Shares New Cocktails To Try All Over Las Vegas

Plus a bar where you can get away from Vegas all together.

Wirtz Beverage Nevada’s Katie Prindl grew up in Las Vegas and now helps new bars, restaurants or stores open or even expand. She knows all about beer, wine and spirits. Here’s Wirtz’s new accounts manager shares some of her favorite places to imbibe, and tips us off on what some of the newest places are serving, or will serve when they open. 

Which bars or lounges do you turn to when you’re not working?
I was born and raised in Las Vegas so I favor the local spots where I have relationships. It’s great to see friends and family I grew up with opening new places around town like Echo & Rig in Tivoli Village. The food and beverage program is really wonderful and well thought out.

If I’m not working, then you can find me at the Pioneer Saloon in Goodsprings, Nev. I’m usually dressed in flip flops and jeans and I got there on the back of a motorcycle. It’s a fun little spot with great history.

Which cocktails are most memorable?
We helped develop cocktails for both Whist Stove & Spirits and Due & Proper, and it was so much fun. So, I would say my most memorable cocktails come from them. Try Aunt Ruby’s Slippers at Whist Stove & Spirits. It has Finlandia grapefruit vodka, aperol, lime and Stiegl grapefruit beer. At Due & Proper, you must have the Dead Rabbit. It’s your classic whiskey sour with an added dose of carrot juice and its fantastic!

Why do you enjoy going there?
It’s nice to get off the Strip every once and a while because honestly. If I’m at a bar in Las Vegas, I’m always working.

Anything else you want to add?
There are great things happening in Downtown Summerlin. The guys at CPK are having some fun with the beverage program and new look of the restaurant. At Trattoria Reggiano, they’re serving some really nice Italian wines. The entire bar at Grape Street is phenomenal. Rice Republic has a spectacular sparkling sake that I can’t wait to try.

There are some other new and exciting spots to try on the Strip. Border Grill just opened at Forum Shops. It’s Jalisco Burro with ginger beer and Ancho Reyes is a must. Tom’s Urban will open by the end of the year at the New York-New York and will serve a killer beer list. You will be able to get a 40 ounce of Colt 45 alongside local craft offerings from Tenaya Creek and others. Yardbird at the Venetian will also open soon. It will have a dynamic ice program to accompany its brown spirit focused list, something this town has never seen.
