The cowboy inspired Roadrunner Saloon chain will be down to one location in January, when the PKWY Tavern takes over their Spring Valley spot. While construction work is ongoing, the Saloon is still open 24 hours, but the new "taphouse & grille" concept is busy stripping away the former Western theme, including changing the booths from fake cow hide over to a more modern design.
Already promised are 250 available beers and a daily happy hour. The beefy 34,665-square-foot space, with potential room for 579 inside, has also allocated a sturdy $407,000 in estimated construction costs.
PKWY's new general manager is Josh Hume, whose recent resume includes time as operations manager for the lounges at Tao and Lavo at the Venetian and as a assistant general manager at Wynn Las Vegas.
Roadrunner Saloon still operates a Summerlin branch at 921 N. Buffalo Drive.
