Food fans searching for the latest, newest, hot off-Strip restaurant should mark their calendars for a new Pan-Asian restaurant arriving very soon.

Planning for a Jan. 1 debut, Inyo Asian Variety Restaurant will open in the former Buldogis and Maple Tree Cafe space, serving tapas style to help guests sample multiple dishes, with the flavors of multiple regions.

Behind the menu is Gregg Fortunato, former head chef of Blue Ribbon Sushi Bar & Grill at the Cosmopolitan of Las Vegas and executive chef at Little Buddha at the Palms. He also served as executive chef at the former Buddha Bar in Washington, D.C.

Owner Chih 'Peter' Chen promises the diverse menu will be be based around affordable price points. Dishes already promised include "Thai Goong Sarong, Thai sweet chili cod, Japanese Yakitori, Japanese Kaiso Salad and Korean Banchan Side Dishes."

Experience working with Japanese, Thai, Korea, and Chinese food is considered a plus for prospective Inyo Asian employees. The restaurant is hiring now.
