If fish collars, pig heads and blood sausage dishes are you're thing, Yusho will be right up your alley. The Japanese-style street food restaurant out of Chicago from Matthias Merges, a Charlie Trotter alum, is already teasing some of the dishes it will serve up with it opens in mid-April.
Seafood, poultry, meats and vegetables will be cooked on robata grills while house made pickles, steam buns, noodles and ramen keep this spot inventive. Be sure to watch for a menu that changes by the week. In Chicago, chefs tend to frequent this restaurant that stays open late. So far, plans call for a 1 a.m. closing time.
