Now Akira Back has his own private label sake, which he plans to unveil at the James Beard House on Saturday. The chef behind Yellowtail at the Bellagio and Kumi at Mandalay Bay is serving up his own Junmai Ginjo.
For his dinner at the James Beard House in New York City, he plans to take guests on a tour of Japan with dishes such as big-eye tuna pizza with micro-shiso and truffles paired with his new sake.
The dinner is $130 and $170 for general public at 212-627-2308, while Akira Back Sake will be available for purchase for $80 at Yellowtail and Kumi this spring.
