The Palms Steams into the Burger Wars

You may have thought that burger wars in Las Vegas were over. Not so. The Palms enters the fray with Back Room Burger, a poolside burger restaurant going in the back of the shuttered Heraea. The restaurant makes its debut tomorrow for the start of pool season.

So here's what to expect. The American-raised beef is ground fresh daily. Look for varieties such as the $11 Mexicali Blues with cotija cheese, chipotle salsa, grilled scallions, guacamole and topped with sour cream or the $11 Ragin' Cajun with spicy Tabasco-fried onions, okra, tomatoes and Cajun mayo. Even vegetarians can get in on the burgers with the $11 Shroom-Zoom with a grilled portobello mushroom, ratatouille, goat cheese and arugula.

Any beef patty can be substituted with organic turkey or American bison patties or served sans the bun in a lettuce wrap.

French fries here include sweet potato versions served with Fresno chili and apricot ketchup and the blue cheese and bacon fries.

Go for spiked or virgin shakes made with custard or sides such as fried dill pickles, shishito peppers and thick cut onion rings.

Back Room Burger will be open Sundays through Thursdays from 10:30 a.m. until midnight and from 10:30 a.m. until 2 a.m. on Fridays and Saturdays.
