MTO Café throws its second pop-up dinner in the Sunday Night Supper Series, this time dubbed "El Chapo's Cantina,"a Mexican-themed dinner on April 27 at 5:30 p.m.
The dinner brings seven chefs creating a dinner where guests choose from four appetizers and four entrees from the chefs along with three desserts to create a customized meal at $60 per person.
Johnny Church of MTO Café, Rx Boiler Room and RM Seafood and Eduardo "Lalo" Saavedra of MTO Café are creating an appetizer of pork belly chorizo queso fundido with roasted pablanos, Asadero cheese and a hand-made flour tortilla and an entrée of tequila lobster tacos with jalapeño Albacar, basil cream and pickled cabbage.
James Trees, the winner of Esquire TV's Knife Fight is making an appetizer of snapper ceviche with passion fruit, avocado, lime, plantain and radish and an entrée of birra de chivo tostada with jalapeño crema, shaved lettuce and salted tomatoes.
Chris Palmeri and Christian Dolias of Naked City Pizza and Desnudos Tacos are creating an appetizer of grilled octopus with huitlacoche and an entrée of ancho short rib with crispy potato.
Jose "Lupe" Avila of Fleur at Mandalay Bay is making an appetizer of camarones agua chile and cucumber gazpacho and an entrée of cochinita pibil with habanero pickled red onions and roasted fingerling potatoes.
For dessert, Heidi Kovall of Rx Boiler Room and MTO Café is making traditional caramel flan, tres leche cake with caramelized bananas and cajeta ice cream and Mexican hot chocolate brownie with pecan toffee and vanilla ice cream.
