Behold, Yusho, the new Japanese street food and noodle house from Matthias Merges at the Monte Carlo. This happy 250-seater sits at the front of the resort on the new Boulevard with 800 Degrees Neapolitan Pizzeria and Double Barrel Roadhouse. Find three sections to the restaurant — a bar area in the front, an open kitchen in the center where guests can interact with the chefs and a dining room overlooking the Strip. Merges' wife Rachel Crowl designed the industrial, exposed brick and dyed cement floor look of this space. Find anime-inspired colors in chartreuse, orange, teal and white, dock lights and safety lights, anime movies projected on the walls and artwork from Sarah Becan, who created an entire comic book series based on the restaurant.
