José Andrés talks about his two new restaurants coming to the SLS Vegas, opening Labor Day weekend. He describes Bazaar Meat by José Andrés as a steakhouse " that will change the way Las Vegas does meat."
"We're going to go into the meat world so people will describe it as a steakhouse. But we're going to do so much more than that," he says. "We're going to be having ovens where we'll be roasting lambs and porks and chickens and an amazing grill in the middle of the casino."
Andrés plans to use a Spanish Josper oven and wood burning grills to "rest and temper the meat." Also on tap, a raw meat bar, a first for Andrés, who also says he wants to reimagine the Philly cheese steak.
His other new restaurant, Ku Noodle, will feature up to 12 types of noodles, including Andrés' favorite, Japanese-style soba, as well as siu mai, fried rice and even shaved ice. He's calling it "Asian comfort food for the soul."
