Chef Daniel Boulud refers to his new DB Brasserie at his "ideal brasserie," with food that is French at its heart yet takes diners on a tour of the world. Tonight, the world will see what Boulud means when his 15th restaurant opens at the Venetian.
Boulud worked with his executive chef David Middleton to come up with the menu here that includes escargots spätzle, poissons fumés with Boulud's own Balik smoked salmon and smoked sable rillettes, crispy duck confit and brasserie favorite steak frites. Boulud borrowed from his DBGB Kitchen & Bar restaurant in New York to bring three gourmet burgers: The Yankee, The Frenchie and The Piggie. Eventually, his DB Burger that started the chef-driven burger craze more than 10 years ago will show up on the menu, which plans to change frequently. Also expect a weekly prix fixe menu to include Boulud specials whether seasonal or from his other restaurants.
No brasserie is complete without a wine list, and the collection here reaches 300, curated by Boulud's group wine director Daniel Johnnes and DB Brasserie sommelier Devin Zendel. American wines get a special place on the menu while French wines also have an enormous role here.
The full cocktail list includes classics such as Le Boulevardier with Bulleit Rye, Aperol and Carpano Antica Formula, florals including the The Peruvian Love with Barsol Pisco, Cointreau, lime, cranberry and lavender soda as well as a bubbly tribute, the Ménage À Trois, a tasting of three Champagne cocktails.
Sit in one of the 280 seats or head to the clubby bar and lounge. All have the look and feel of a French brasserie with subway green and white tiles, a faux-skylight and Parisian Metro subway lights. The look and feel of this place is just as refined and elegant as Boulud himself.
For now, the restaurant will be open for dinner seven days a week from 5 to 11 p.m., with the bar staying open until midnight. Soon, lunch arrives and the restaurant will open at 11 a.m.
