José Andrés Looks to Bazaar Meat at SLS Las Vegas

Within a flurry of new press releases announcing the acceptance of hotel room reservations for the forthcoming SLS Las Vegas resort, you'll still find descriptions of The Bazaar as the much, much-anticipated restaurant from chef José Andrés. However, the resort's newly updated Website confirms what has been suspected for weeks. Bazaar Meat will be the name and focus of the latest creation from the culinary visionary, when the mammoth $415 million hotel makeover debuts Labor Day weekend.

Rather than replicate The Bazaar scene already found at sister resort SLS Beverly Hills, in Las Vegas the chef will focus on all things carnivore, serve "social, shared plates," add two private dining rooms and fill out 15,688 square feet of space.

Back in November, the Los Angeles Times managed to squeeze a tiny preview from Andrés, who called the concept "Meat-centric ...but deeper, deeper, deeper." Expect steaks, lamb and "pigs cooked on big grills and a couple of types of wood-burning ovens (yes, plural)." A promotional brochure created by the property explains the restaurant's cocktail program will be displayed on "roving carts."

Open only for dinner, Bazaar Meat is scheduled to be open from 5:30 p.m. to 10:30 p.m. Sunday to Thursday and until midnight on Friday and Saturday.

Designed by the resort's conceptual stylist, architect and designer Philippe Starck, this won't be the only place to receive the Andrés touch. Further within the resort he has developed the Bar Centro & Casino, a nightly venture open from 5 p.m to 2 a.m. Bar Centro promises it will serve "classic cocktails with a twist," plus the teased description of "inventive delights." The bar will also feature its own menu and on-site gaming.

And for the hat-trick, Andres will also be creating the "intimate" Ku Noodles. Yet to be formally introduced, the restaurant will feature his riffs on "traditional pan-Asian cuisine." This location will be open for both lunch and dinner.
