It's starting to look like it's Mercadito Hospitality's world and the Green Valley Ranch just lives in it. An inside source informs Eater Vegas that Chicago's speakeasy-style cocktail lounge Double A is headed to the resort.
The ongoing dramatic culinary changeover at Green Valley also includes Mercadito Hospitality's forthcoming Tippling Hall cocktail room and an outpost of their Mercadito Mexican restaurant. Another branch of Mercadito is already headed to Station Casinos sister resort Red Rock Resort.
Double A's original compact space in Chicago enables the concept's "bar theater" to shine, allowing guests to watch the cocktail creation process and sit at a "mixologist's table," similar to a chef's table, where imbibers can receive a close up view of the experience. It is not known where the rumored Las Vegas arrival would be located at the resort, but in Chicago it is appropriately housed underground, below their Mercadito Chicago restaurant.
The other big changes at Green Valley Ranch include the shuttering of Sushi & Sake and China Spice to let in Pizza Rock from Tony Gemignani, who will also create the more casual Slice House spot to serve up his award-winning pizza. Terra Verde also closed to become the site of the future Mercadito.
And Quinn's Irish Pub closed to be taken over by Tippling Hall the brainchild of Mercadito partners Tad Carducci and Paul Tanguay, adding a "menu of globally inspired comfort food" to the substantial alcohol menu.
Still running on property is Hank's Fine Steaks & Martinis,Grand Cafe,Tides Oyster Bar and the Feast Buffet. Currently and glaringly missing from all the surprising and welcome changes is an Asian-inspired destination.
