Takeshi Omae has quite a background. He learned his craft at Le Cordon Bleu in London, then worked under Masaharu Morimoto as executive chef for Morimoto XEX in Tokyo. He took over the restaurant and changed it into Omae XEX, where he won Michelin stars twice. He was even Morimoto's sous chef on Iron Chef America. And he's headed to Vegas.
Omae invaded Sherman Oaks, Calif., first with his Ramen by Omae, a restaurant that takes more time to brew its broths than anywhere else in the world. That's already exciting critics in Los Angeles.
But his next stop is Vegas, where Omae plans to bring Japanese Cuisine by Omae, a tiny 12-seat omakase. While the tease on his Website says opening May 1, it's not here quite yet. Rest assured that when it does open, this could be the toughest ticket in town to get. You'll want to leave it to the chef, who already teased an omelet rice, saying only one dish will be served and it will change every week. Mysterious.
UPDATE: Omae says he may be able to open on June 15. Stay tuned.
