Soon you will be eating Mexican food done the Mercadito way at Red Rock Resort. Already the restaurant, which seats 60 in the front dining room and another 47 on the outdoor patio with its own bar (plus more in the indoor bar area), is gearing up for its 12 styles of tacos and six varieties of guacamole. Salsas and ceviches, along with a grilled whole adobo marinated chicken, are all part of the menu here.
Come June 23, the restaurant will be serving up six beers, agua frescas such as pineapple ginger, strawberry cinnamon and cucumber lemongrass (and yes, adding alcohol is encouraged) and craft cocktails from the Tippling Bros. Here they raid the chef's refrigerator for ingredients for the drinks, six of which will be served on tap. Look for cocktails such as the Pepino El Pyu with a cumin salt rim and the Auntie Ox with vodka, passion fruit and cinnamon. Never worry about ordering your margaritas with or without salt; Mercadito only salts half the rim.

Wood floors, tiles and rope, an homage to the original Mercadito signs, are ready to roll out the welcome carpet for guests.
Expect Mercadito to be open for lunch and dinner and to roll out brunch eventually.
