Firefly Tapas Kitchen & Bar is still reeling from the after-effects of the salmonella outbreak that made more than 330 people ill last year.
Many of the claims against the restaurant have been settled, covered by a $3 million insurance policy. That location at 3900 Paradise Road was permanently shut down " at the request of health officials," the Henderson location shut down in April after business slowed there, a new Firefly opened just a stone's throw away from the original and Imperial Tacos & Beer opened in the former Firefly.
Business for owners Tabitha and John Simmons fell as much as 80 percent at the worst point, and 20 percent of staff was laid off.
Other new additions to Firefly include a revamped kitchen operation, a "dedicated food-safety expert," food-handling classes for staff, new refrigeration equipment and text message alerts when food temperatures become unsafe.
