Take a gander inside Carson Kitchen, the new restaurant from Kerry Simon inside the former John E. Carson Hotel. Simon and his business partner Corey Harwell kept the bones of the original building and partially named it for The Mercer Kitchen in New York City by Simon's mentor, Jean Georges-Vongerichten.
Find an 1,800-square-foot dining room with room for 90 in a kitchen, bar and dining room with design touches inspired by Simon's own loft-style home in Las Vegas with reclaimed wood and steel. The chef's table borders the open kitchen and doubles as an expo counter. The kitchen was built around the stone-oven while twisted metal pieces run from floor-to-ceiling to separate the space into different areas. The bar top counter is made of an end-cut of a butcher's block.
Upstairs, find a 910-square-foot, garden-style rooftop patio with a six-foot-tall living wall and a bar top made of funky granite.
