Daniel Boulud and David Middleton at DB Brasserie at the Venetian talk about what the difference between a steakhouse and a brasserie.
DB: When you look at a steakhouse, what is the difference? It's the same type of experience. You're eating and offering good service.
DM: It's just the menu.
DB: A steakhouse has a more predictable menu. A brasserie is more personal. A steakhouse to me is an American brasserie. It's also that clubbish feel with warm woods, leathers, mirrors and brass feeling.
