Need a timeframe for Brian Massie's new Hearthstone Kitchen & Cellar opening at Red Rock Resort? Think mid-October for the opening. Massie's restaurant plans to use seasonal and sustainable ingredients, a menu of hand-crafted cocktails and an extensive wine list. The restaurant from The Light Group takes over the former home of Hachi at the resort.
Massie plans to use organic produce from farmers, ranchers and fishermen who practice sustainable agriculture.
Expect three options for dining — on the outdoor patio of the resort's new restaurant row, at the chef's table in the private enoteca or in front of that exhibition-style wood-burning stove. A mixture of reclaimed wood, brick and raw materials will give the space a "bohemian flare" to the space.
