Pop up pairings continue to proliferate and Delmonico Steakhouse at the Venetian and the Kosta Browne Winery will be the latest to team up, hosting a New Orleans inspired five course deal on Thursday, Sept. 4.
Chef de cuisine Ronnie Rainwater and winemaker Dan Kosta will take guests through five courses with red and white pairings from the Kosta Browne collection.
First Course
Alaskan king crab leg with white truffle sweet corn foam, popcorn shoots and micro greens
2012 Chardonnay One Sixteen
Second Course
King salmon with chanterelle mushrooms, sunchokes and mushroom broth
2010 Pinot Noir - Gap's Crown
Third Course
Rabbit and foie gras fricassee with sage dumpling and fresh black truffles
2008 Pinot Noir - Amber Ridge Vineyard
Fourth Course
Roasted veal loin with parisienne potatoes, pearl onions, pinot noir reduction and fine herbs

Fifth Course
Chocolate génoise cake with raspberry coulis and chantilly cream
Champagne and hors d'oeuvres begin 6:30 p.m. and dinner will be served at 7 p.m. The event is $195 all inclusive. Reservations are required by calling 702-414-3737.
