23 Massive Restaurant and Bar Openings in Las Vegas Through Fall

Gird your stomachs. Late summer and fall promise to be a huge season for new restaurants and nightlife establishments to start serving up their fare in Las Vegas. The opening of SLS Las Vegas brings with it two restaurants from José Andrés along with Katsuya by Starck, the very first Umami Burger (with a beer hall! and a sports book!), Cleo, The Griddle Cafe and more. Three nightclubs are part of the resort, all debuting this weekend. Then there's Downtown Summerlin, the new shopping center opening just south of Red Rock Resort, bringing Wolfgang Puck's first off-Strip location, a third restaurant from Elizabeth Blau and Kim Canteenwalla, a second MTO Cafe and more. Tony Hu has his first restaurant coming to Vegas and it promises to blow up the Chinese scene here. Border Grill has a second location planned on the Strip. Brian Massie heads off-Strip with Hearthstone Kitchen & Cellar while the Commonwealth guys bring a restaurant and a bar to Henderson. The Situation: José Andrés promises that Bazaar Meat, his third (or fourth, depending on whether you count é by José Andrés inside Jaleo) restaurant in Las Vegas, will be much more than just a steakhouse. Wood-burning ovens, pigs, lambs and chicken roasted over flames and cocktails on roving carts have been promised.

4.) Ku Noodle

The Situation: Make that the fifth restaurant from José Andrés in Las Vegas. Ku Noodle promises Asian cuisine with a nod to handmade noodles. Siu mai dumplings, soups, salads and more also make the menu coming from the kitchen that can be seen from the casino floor.

The Situation: This marks the second location in Vegas for the pizzas baked in 60 seconds in an 800-degree oven. The pizzeria uses California-grown tomatoes, fresh mozzarella and a crust made with flour from the ancient Molino San Felice in Naples, Italy.

9.) The Perq

The Situation: This LA-based specialty roaster brings gourmet coffee and tea to SLS Las Vegas. The coffee shop offers a selection of fresh salads, panini, Danishes, and other house-made pastries, plus freshly-made gelato and gelato sandwiches from morning to night.

The Situation: The Mayor of Chinatown in Chicago has 16 restaurants there, but this is his first foray outside the Windy City. The 150-seat restaurant taking over the former Little Buddha promises 200 beef, chicken, pork and seafood options on the menu covering soups, dim sum and traditional hot pots as well as his newest dish, Sze Chaun peppercorn fish, and his most famous dish, the very spicy Tony's chicken with three chili. Get very excited about this one.

The Situation: This 24-hour restaurant plans to feature sustainable ingredients for breakfast, lunch, dinner and late night. Look for dishes such as cinnamon roll French toast, feta and spinach scrambled eggs and a short rib pot roast hash served round the clock. For lunch and dinner, served from 11 a.m. to 6 a.m., find mahi-mahi tacos, clam chowder, a chopped vegetable salad, a natural honey-roasted turkey BLT, "Texas Pete" fried natural chicken, as well as desserts such as a seasonal fruit cobbler and cookies baked on the spot.

The Situation: The former Heraea chef and his partner brings a twist on Southern cuisine to Town Square. Pot liquor is the name of the broth used to cook meat or vegetables. Look for an emphasis on American whiskies as well as stuffed trotters accompanied by brandy braised apples, "pepper greens and sticky sauce, grilled prawns with Boudin Noir and pork belly with country grits." Entrees include "Texas style sliced beef brisket, hangar steak over ox-tail ragu, fried catfish benedict and Carolina chopped pulled pork." A fried green tomato salad also makes the grade.

17.) Hearthstone Kitchen & Cellar

The Situation: The Light Group expands to the suburbs with seasonal and rustic American dishes, an extensive wine list and an exhibition wood-burning grill. Expect a menu meant to be shared.

18.) Wolfgang Puck Bar & Grill

Major Players: Wolfgang Puck
The Situation: Wolfgang Puck brings a classic American bar and grill with lunch and dinner menus featuring comfort food as well as offering seasonally driven salads, sandwiches, grilled meats, seafood, handmade pasta and pizzas from the wood-burning oven.  Classic and artisanal cocktails, craft beers and wines will make the bar menu.

The Situation: This place at the northern entrance to Downtown Summerlin plans to be "an homage to all things grilled, roasted, shucked and seared." Premium meats are the name of the game here. Seasonal market sides will accompany these dishes.

20.) MTO Cafe

The Situation: The popular Downtown spot opens its second location at the new shopping mall and adds dinner to the mix.

The Situation: Whist will be a 3,000-square-foot restaurant and bar with mismatched wooden furniture, crystal chandeliers, tarnished arches, Low Brow art and a canopy of overlapping copper with a menu of sharable dishes and cocktails, boutique wines and craft beer. This spot plans to be open 24 hours with breakfast, lunch, dinner, late-night dining and a weekend brunch. Due & Proper at 2,500 square feet will feature red double doors leading to a patio of wrought-iron furniture. Here expect a menu of pub fare, including British bangers and mash, Irish fish and chips, and American hot pretzels, burgers and more. Craft, domestic and imported beers will highlight the drinks menu.
