Joining fellow Australians Gelato Messina coming to Downtown Summerlin this fall, will be Ribs & Burgers, a rapidly expanding casual restaurant chain. An Eater Vegas tipster added their name to our guide to the 106-acre, 1.6 million-square-foot mall's casual dining options.
Created by Seagrass Boutique Hospitality Group, Ribs & Burgers currently operates 10 locations in Australia. Their beef, lamb or pork ribs are slow cooked for eight hours and caramelized with their "secret basting." All their burger meat is free range and hormone free.
The concept originated at Sydney's Neutral Bay in 2011. Seagrass also runs four locations of the more up-market, but equally relaxed, The Meat & Wine Co. steakhouse. Ribs & Burgers, like Gelato Messina, also has an outpost within the Café Court dining area of The Star Sydney Casino & Hotel, the second largest casino in Australia.

The Ribs & Burgers menu is compact, featuring their "butchers choice" burger range, ribs and a selection of salads. Popular burger choices include the Wagyu burger with "premium Wagyu beef mince, cos lettuce, tomato, spanish onion, dill pickles and crunchy onion rings, topped with our pink and B.B.Q sauce," the Steak House Burger, made with "grain-fed rib eye with caramelized onion" and the Mini Burgers, their "half size beauties, 1 beef, 1 chicken, 1 lamb ."
One thing that will probably change on arrival is the renaming of their "chips" to "fries."
Downtown Summerlin will officially debut Oct. 9.
