Could this mean more Italian fare at Marche Bacchus? Former Valentino chef Luciano Pellegrini is now the consulting chef for the French restaurant, shoes formerly filled by Alex Stratta. The James Beard Award winning-chef is also running DolceVita Gelato, which he opened after Valentino closed at the Venetian last year. He works with executive chef Jose Aleman, who replaced David Middleton, now at DB Brasserie. [LVW]
