Timothy Henderson has been appointed Executive Chef of Tableau at Wynn Las Vegas and has hit the ground running with some menu upgrades. The Nevada native's local career includes stints at STK, Old Homestead Steak at Caesars Palace and not far from his new job, at Andrea's at Encore at Wynn Las Vegas. He also worked two previous stints with Michael Mina, at Pisces in Burlingame and Arcadia in San Jose.
Chef Henderson is creating for breakfast a "vegetable frittata topped with a squash blossom salad. The filling is summer squash and cherry tomatoes." The salad feature micro herbs and "delicate petals of sweet summer squash blossoms."
Other new menu items include Maine lobster salad served with English peas, Boston bibb lettuce, and quail eggs and an Atlantic stripe bass dish served over pea tendrils, dandelion greens, wild mushrooms, and roasted fingerling potatoes.
Open daily from 7 a.m. to 2:30 p.m. Tableau's garden atrium setting has long been regarded as a hidden gem by locals and repeat visitors.
