While more of an introduction to Bazaar Meat by José Andrés than a review, Al Mancini turns in the first of the new "more than a steakhouse" at SLS Las Vegas barely three weeks after opening. "Leave it to José Andrés to take on the steakhouse — the most boring dining concept — and completely turn it on its head."
He says the steaks come out sliced for the table to share. Other dishes to try include the Asian "tacos" (Ibérico ham and flying fish roe on a sheet of nori), the cotton-candy foie gras ("Their sweet, airy wrapping is a beautiful counterbalance to the buttery meatiness of the fatty duck liver within.") and the "Foiffle" ("light-as-air, hollow waffle stuffed and topped with foie gras foam, peanut butter and honey.").
