Barbecue Haven Pot Liquor CAS Swings Open the Doors

Doug Bell and Flip Arbelaez's Southern-style barbecue restaurant opened quietly last night. Pot Liquor CAS, which gets its name from the broth in which collard greens and smoked meats have been cooked, sits next to Crazy Pita at Town Square.

Bell, the restaurant's executive chef, spent more than six weeks traveling through Memphis, Nashville, North and South Carolina, Kansas City, and Texas to put together the eclectic barbecue styles at this restaurant.

Find stuffed trotters, or pig's feet with a pork meat stuffing, with brandy braised apples, pepper greens and sticky sauce; grilled prawns with Boudin Noir; and pork belly with country grits. A Texas-style sliced beef brisket, hangar steak over oxtail ragu, fried catfish Benedict, and Carolina chopped pulled pork show the diversity of the dishes.

On the drinks menu, find seasonal cocktails, sweet teas, fresh squeezed lemonades, and beers.

The 6,622-square-foot restaurant features exposed brick walls, wooden tables, and communal seating. Artwork from local artists covers the walls.

The restaurant is open Sunday through Wednesday from 11 a.m. to midnight, Thursday through Saturday until 2 a.m.
