Border Grill is pretty close to opening at the Forum Shops at Caesars, and that means new chefs will take over the kitchen. Chris Keating, who's already the executive chef at the Mandalay Bay location, plans to head up the kitchen. Agustin Guevara comes in as executive sous chef, and former Rao's chef Nicole Grimes, who left the Caesars Palace outpost to open the new Hollywood branch, returns to Vegas as the sous chef. Jennifer Holley comes in as the general manager.
Keating's experience includes stints at Bobby Flay's Mesa Grill in the Bahamas.
Holley helped open the Bellagio, and has worked as the manager at Switch and Country Club at Wynn Las Vegas, general manager at La Cave Wine & Food Hideaway, and department head of the banquet beverage team for Wynn and Encore.
Guevara worked at the Bellagio and Caesars Palace, including a nine-year stint at Mesa Grill. Guevara joined the Border Grill team earlier this year and has since been training under Keating at Mandalay Bay.
In other chef shuffle news, former executive pastry chef for Hakkasan at the MGM Grand Monica Delgadillo is now the corporate pastry chef for Mina Group.
