Carmine's New Cookbook Celebrates Abbondanza

Want to make big dishes for your huge family? Carmine's has a cookbook for you.

Carmine’s, the massive Italian restaurant at the Forum Shops at Caesars, now has a cookbook coming out that celebrates abbondanza, the Italian idea of generosity and abundance. Carmine’s Celebrates will be available nationwide starting Tuesday, Nov. 4 for $29.99 from St. Martin’s Press.

The cookbook includes more than 100 dishes meant for large gatherings. Glenn Rolnick, the director of culinary operations for Carmine’s parent company Alicart Restaurant Group wrote the book with Chris Peterson. Weekend family dinners as well as holidays such as Easter, Thanksgiving and Christmas are covered.

Some of the recipes inside include classic arancini with prosciutto and peas, sea scallops wrapped in pancetta, pasta carbonara, mussels fra diavolo, osso buco and chicken cacciatore. In addition to side dishes, salads, antipasti and desserts such as chocolate torta and New York-style cheesecake.
