Table side preparations of dessert are no stranger to Las Vegas, but this one takes a day to prepare in advance, stands one foot tall and involves flames right on your table. The Mt. Fuji at Andrea’s involves devil’s food cake layered with a Myers dark rum mousse, all layered in a cone and frozen. Wynn Las Vegas executive pastry sous chef Elizabeth Peck then coats the outside with a 64 percent dark chocolate followed by fluffy meringue that’s lightly torched in advance.
Then comes the big reveal at your table. A server pours Bacardi 151 over the entire dessert and lights it on fire. The Mr. Fuji serves 10 people, and smaller versions are available for five to six people.
