Rob Moore served his last meal as the chef de cuisine of Jean Georges Steakhouse at Aria. He moves over to Jean-Georges Vongerichten’s Prime Steakhouse at the Bellagio. Moore says he will also be assisting the Jean Georges management team open restaurants globally.
Moore’s resume includes stints at Lespinasse, where he cooked under Gray Kunz, Sammy DeMarco’s First and DeMarco’s Room, and Sensi at the Bellagio in Las Vegas.
This marks a homecoming of sorts for Moore. In 2006, he became executive chef at Jean-Georges Vongerichten’s Prime Steakhouse at Bellagio before jumping over to Jean Georges Steakhouse at Aria.
