Behold the Alain Ducasse Menu For Rivea, Opening Tonight at The Delano

A gentle wave from Saint Tropez washes over the 64th floor of the Delano Las Vegas tonight as Alain Ducasse unveils his transformation of Mix into Rivea, with a new design palette and a menu the famed chef describes as "seductive."

Created in conjunction with Executive Chef Bruno Riou, the French and Italian menu has been influenced by the food markets of Provence and Italy, "the casual and vibrant nature of the Riviera" and an emphasis on "simple, fresh plates."

Small dishes are encouraged to be shared and the culinary team are already directing guests to signature dishes, including "crispy socca, a traditional cold cut board, stuffed baby vegetables, an original Niçoise salad in a chickpea wrap" and their limoncello sorbet dessert.

Ducasse revealed his inspirations and thought process while building the menu with Eater Vegas last month.
