It's been nearly a year since Pancho's Mexican Restaurant officially confirmed its plans to construct a $3 million restaurant at Downtown Summerlin, and the project was once tentatively set for September. Turns out the estimate wasn't far off, as Pancho's just announced it will open the doors to its brand new, 10,500-square-foot facility on Thursday, October 8, a week from today.
