Rene Lenger IN at The Country Club, Carlos Guía OUT

Plus David Middleton takes over Tableau and Paul Zlatos moves over to Lakeside.

Big chef shuffles coming out of Wynn Las Vegas late on a Friday night. First up, Rene Lenger takes over as executive chef of The Country Club — A New American Steakhouse, taking the place of Carlos Guía.

Lenger, who has been with Wynn since 2007, worked at The Country Club, Switch Steakhouse and Lakeside. Lenger plans to bring on new menu items and seasonal dishes.

David Middleton returns to Wynn as the executive chef of Tableau. He spent five years working with chefs Paul Zlatos, Devin Hashimoto and Alex Stratta at Michelin-starred Alex in Wynn Las Vegas. He left Wynn to open Scarpetta at the Cosmopolitan of Las Vegas as executive sous chef and worked as executive chef at Marche Bacchus and Daniel Boulud’s DB Brasserie at the Venetian. Middleton takes over the seasonal breakfast, lunch and brunch menus at Tableau.

Paul Zlatos will become assistant executive chef at Lakeside under executive chef David Walzog, reuniting after opening the restaurant together in 2010. Since 2010 Zlatos worked as Oprah Winfrey’s personal chef, as executive chef at Sirio at Aria and, most recently, executive chef of Tableau.
